Coriander, Mint, Chilli & Lime Butter

Finely chop a handful of coriander and a handful of mint, together with a red chilli. Put in a bowl with 125g unsalted butter, the zest of one lime and 1/4 teaspoon of salt. Use a fork to mash it all together. Roll into a cylinder shape in greaseproof paper. Put in the fridge.

When you want some to serve on steaks, pork chops etc. it’s ready to slice.

Cafe de Paris Butter

It takes its name from the Swiss restaurant where it originated. Finely chop half a bag of flat leaf parsley. Chop a few chives. In a medium bowl combine with 125g of softened unsalted butter. Add 1 crushed clove of garlic and 1/2 a teaspoon of paprika, as well as 1 teaspoon of Worcestershire sauce. 25g of grated Parmigiano Reggiano and a quarter teaspoon of salt. Use a fork to mash all the ingredients together. Wrap in greaseproof paper and make it into a cylinder shape. Serve slices on top of steak.

Tarragon, mustard and lemon butter

Finely chop a 20g pack of tarragon. Put in a bowl with 125g of softened unsalted butter. Add half a teaspoon of Dijon mustard and the zest of one unwaxed lemon 🍋 and a quarter teaspoon of salt, plus some freshly ground black pepper. Use a fork to mash everything together. Baste chicken breasts or pork chops with this butter just before serving or toss through steamed new potatoes.

High blood pressure anyone?

I was diagnosed in my early fifties. Could be hereditary as mum had extremely high BP. Dad? No idea. When I was five years old he came to pick me up from school, telling the teacher mum was ill. He then took me to a cafe and onto a train. By the time we were onboard the police had been informed of a missing child and the train wasn’t allowed to leave the station until we alighted and my dad was questioned. He was allowed to continue his journey to a B & B where he left me in the care of the landlady. A few days later we moved to a seaman’s mission and my mum used a private investigator to get me back. Never saw or heard of dad again so have no idea if he had high blood pressure.

Somehow I have got onto the British Heart Foundation magazine list. My doctor said I must exercise more and suggested running to the local swimming pool. Having a swim and walking home. The BHF magazine warns against sudden exercise as it can make people on BP medication very dizzy. I cannot run as have osteoarthritis in both knees, not to mention fear of leaving home since all that Covid STAY AT HOME scary advice. Anyone else feeling the same?
